Everyone likes a party, especially when there are plenty of appetizers and conviviality. But appetizers are not just for parties. They can be served as the first course of a meal as well. Appetizers are any foods that stimulate the appetite.

*APPETIZERS FOR A PARTY*

* Dips are for dipping, not dripping. Make them thick enough to cling to vegetables, crackers, chips or fruit. Instead of the usual bowl, hollow, out vegetables such as eggplant, squash, cabbage, peppers or even a sweet Spanish onion. A fresh hollowed out pineapple makes a nice bowl for a fruit dig.

* Spreads should glide over bread or crackers, not shatter them. You can choose from meat or poultry spreads, cheese, seafood or even vegetable spreads.

* Canapes are miniature, open-face, hot or cold sandwiches on a base of either bread, pastry, Eräcker or sliced

INGREDIENTS

2 whole chicken breasts Skinned, boned, and halved. About 1 pound

2 eggs.

Peanut or vegetable oil

1/2 teaspoon salt

1/4 teaspoon pepper

1 cup packaged bread crumbs

1 cup very finely chopped walnuts

Mustard mayonnaise Dip (recipe follows) 1. Cut the chicken breasts into 1/2 by 3 inch strips with a very sharp knife.

Beat the eggs with 1 tablespoon of the oil, salt and pepper in a shallow bowl. Mix the crumbs and nuts on a plate. Preheat oven to 425 degrees. Continued on p. 10
